Radicchio, Fig & Orange Salad

In the salad, radicchio’s variegated wine coloured leaves of slightly bitter flavour are balanced with the sweet yet mildly acidic navel orange segments, buttery pecans and honeyed figs.  

Health benefits:

·       Radicchio is loaded with vitamin K and is a key food in the Mediterranean diet that supports heart health, decreasing heart attack risk and contributing to a healthy blood pressure. The presence of vitamin K helps the body builds and maintains strong bones that assists in the prevention and treatment of osteoporosis.

RADICCHIO, FIG & ORANGE SALAD

1 head radicchio

2 navel oranges

3 figs

½ cup (70 g) pecans

orange juice

extra virgin olive oil

Separate the radicchio leaves, wash and spin or pat dry to remove water on the leaves. Peel the orange removing the bitter pith with the skin and cut into slices or segments. Cut the figs into quarters or slices. On the platter, place the radicchio leaves, orange and figs slices and sprinkle with pecans. Prior to serving, squeeze an orange over the salad and drizzle with drizzles of extra virgin olive oil.
