Coconut Overnight Oats with Summer Fruit

My father owned two banana plantations for several years and since we were ‘cash’ poor, bananas were the only fruit we ate. It’s may seem strange that after eating so many bananas in my early years that I never tire of eating them. I love eating them ripe when the skin speckles with brown spots, frozen for smoothies and nice cream, chopped in a fruit salad.

I don’t use a sweetener in my overnight oats, opting for natural sweetness from fresh fruit with the creaminess of the coconut yogurt.

 

Health benefits:

·       Hemp seeds are an excellent source of essential fatty acids including Omega 3, 6 and GLA in the perfect balance. They are a more digestible protein than meat, whole eggs, cheese, human milk, cows milk or any other high protein food. Rich in Vitamin E.

·       GLA, gamma linolenic acid, is an essential omega-6 fatty acid found in egg yolks that has been proven to naturally balance hormones.

COCONUT OVERNIGHT OATS w SUMMER FRUITS

PB, V, DF, SF, GF

Serves 2

1 cup (80 g) organic whole rolled oats

½ cup (125 ml.) plant milk

3 tbsp (45 g) coconut yogurt

1 tsp (5 g) runny nut butter

fresh summer fruits, peaches, figs or strawberries

a few nuts like chopped almonds

Add ingredients to a bowl, mix well and spoon into a glass jar and refrigerate overnight. The next morning, eat your overnight oats chilled and directly from the jar or poured into a bowl with fresh summer fruits and chopped nuts.
